I would like to edit protect parts of a pdf and leave the remaining parts unprotected. How can that be done?
PS! I know how to protect the entire document, but that is not what I want.

I want to protect parts of a PDF so that the contents of these sections cannot be copied via copy/paste. It should still be possible to copy the remaining parts of the document.
In my original post, I used the term 'edit protect' because that's the term Adobe uses for protection against editing, copying, and printing.
Is it clear what I mean?

Yes, but there's no way to do that, unless you convert those texts to an image ("outline" them), but someone would still be able to extract those images and run Text Recognition on them to get the text...

Thanks a lot for the reply.
I have already considered converting parts of the document to images. I wonder if there is an easy way to do that in Acrobat—like selecting a specific part of the document and then asking Acrobat to convert the selection to an image.

Yes, there is. Select the area with the mouse (hold down Ctrl so it doesn't select just text, but a rectangular area of the page), then right-click it and select "Take a Snapshot". You can then paste it into an image editing app and save it as an image file, or even create a new PDF file directly from it, via File - Create - PDF from Clipboard.
