We have had quite a few snowy days in the last few weeks where we live. I love winter time and I especially love the snow! When its just cold and dry and bitter outside, its harder to appreciate the wintertime than when there’s a beautiful blanket of fresh snow out the windows.

My favorite thing to do on snow days is hang out in the kitchen all day and bake and cook to warm up the house. Sometimes its fresh cinnamon rolls with homemade chili, maybe a big pot roast with potatoes and carrots, but usually its a delicious, from scratch soup with our favorite homemade bread.

Soup just really hits the spot on those cold, winter days. I am always looking forward to the cooler days of fall and winter when I can make soups again. I’ve tried to make my favorite soups in the summer because I was craving them, but it didn’t go over so well, ha. We don’t have A/C in our little house so the fam was not excited about a hot soup on a hot summer day!

All is well though, I just get in as much soup making as I can in the winter to make up for it. Now, if you’re used to soups out of a can, or even dry soup packets, you NEED to try making a completely from scratch soup. It just can’t be beat.

I’m talking homemade beef or chicken broth, whole vegetables, maybe some dried beans or lentils, and all of the other goodies you enjoy. Cooking from scratch can be such a joy! I really enjoy trying to get as from scratch as I can in my cooking. If a recipe calls for mayonnaise, why not make it?! Canned tomatoes? Can your own! YUM.

Aw, one of my favorite foodie, homestead bloggers, Shaye from The Elliott Homestead. I have both of her cookbooks and absolutely love them and the recipes in them. She shares simple recipes made with delicious, real ingredients. This tortellini soup with chicken and pine nuts by her has had my eye for a while. Try it out this winter!

Dried beans in soup give it a really delicious and hearty flavor. I know she also has a homemade, sourdough tortilla recipe her site, I think this soup would pair so well with that!

Slow cooker meals are great for those busy winter days, or mornings when you want to get a meal started and just enjoy your fam the rest of the day.
