These easy no yeast Air Fryer flatbread pitas are a delicious Greek pocketless flatbread. They are perfect to use for Gyros or any lamb or chicken kebab. Serve these freshly baked pitas with a selection of Greek mezze and dips such as tzatziki.

You can cook these on a hot griddle pan or flat top, but I love how they puff up so easily in an Air Fryer and are more hands-off. You could also bake them in a very hot oven to achieve the same result.
They are soft and pliable which makes them perfect to roll up. Whilst they do puff up in the air fryer, they deflate when they come out and are used as a flatbread to scoop hummus and other dips.
These fresh no-yeast pitas are best eaten warm soon after they are baked. As they are made from very simple ingredients they will not keep.
How to make easy Air Fryer flatbread pita
Mix the flour, salt and baking powder in a bowl and whisk to combine.
Add the water, yoghurt and olive oil and mix until it comes together in a scraggy dough.
Tip this out onto a floured surface and knead for around 6 – 8 minutes until the dough is smother, soft and springy to the touch.
Cut the dough into 8 pieces and roll each piece into a ball. It is easiest to roll the balls on an unfloured part of your work surface. Place the balls onto a floured tray and cover with a towel. Allow to rest for 20 – 30 minutes.
When you are ready to make the pita, preheat your Instant Vortex Air fryer to 200C/400F.
Dust a surface with flour and roll out the pita to large even discs around 15 – 20cm (6 – 8 inches) in diameter. Turn the rolled-out dough a few times to maintain its round shape.
Place each piece of rolled dough into the preheated Air Fryer basket and cook until puffed up and starting to take on colour. This will take about 3 – 4 minutes.
Once they have puffed up, remove with tongs, and add the next one.
Keep the flatbread, and pitas warm by placing them in a thick tea towel.
Serve them with my very delicious Air Fryer Greek chicken kebabs.
To make these flatbread pitas on a stovetop
Heat a cast iron skillet over a hob until quite hot. Lightly oil the surface with a neutral cooking oil or spray.
Place the rolled-out dough onto the skillet and cook for about 2 minutes per side.

Notes
Serve with tzatziki, red onion and tomato salad, other leaves and grilled chicken or meat. Or any other filling you like.
