Aunt Lou here.

When I first branched out on my own, I was terrified to cook. Even when preparing something like Hamburger Helper or boxed scalloped potatoes, I was scared I was going to mess it up. (Who says God doesn’t have a sense of humor in turning me into a food blogger! 😉 )

I actually REALLY like cheesy scalloped potatoes from a box, so I gladly picked up a box of my old favorite for this recipe!

      Hi Margaret!

You could possibly use a box of Au Gratin Potatoes. It would alter the taste a little, but I think it would still work! Enjoy!

My grocery store didn’t offer a 7.8 oz package of cheesy potatoes. The largest I could find is 5 oz. I’ll see what happens.

FAQs

Why are my potatoes not going soft in the crockpot? ›

Insufficient Liquid: If there wasn't enough liquid in the crockpot, it could have caused uneven cooking. Potatoes need to be fully submerged in liquid to cook evenly. Old Potatoes: Very old or stored potatoes can become starchy and may not soften as well during cooking. It's best to use fresh, firm potatoes.

Plus, you can set it and forget it, leaving your hands free to do other things. It depends how well-done you prefer your spuds, but in general, they'll be ready to eat after 4 to 6 hours in a slow cooker.

How not to overcook potatoes in a slow cooker? ›

If overcooked, the potato can turn gummy from all the moisture around it, so it's best not to keep them in the "warm" setting once they're fully done. When roasting in a slow cooker, pierce them again with a fork after 3 hours on high to test them out. If they're tender and ready to go, take 'em out of the slow cooker.

What goes well with scalloped potatoes? ›

Scalloped potatoes are rich and filling. Lean proteins and other veggies pair nicely, try grilled ham, pan-seared fish, roast chicken, broiled lobster, or even a filet of beef tenderloin. If no animal proteins are desired a lovely side salad with a sharp vinaigrette works great.

What to do if potatoes aren't soft enough? ›

If you get to this point and you realize you've undercooked your potatoes, just add a little bit of milk or cream and cook the potatoes over a low heat until the lumps begin to soften. Next time, make sure you cook the potatoes fully by inserting a fork into them before taking them off the heat.

Why are my potatoes turning black in the crock pot? ›

This process, which is called oxidation, happens because potatoes are a naturally starchy vegetable. And when exposed to oxygen, starches turn gray, brown, or even black. An oxidized potato is completely safe to eat. The process doesn't affect the flavor or texture of the vegetable.

Why are my potatoes in casserole still hard? ›

The potatoes should soak up the juices in the pan and become soft and tender and not hard and should not need parboiling beforehand. We suspect that the pan may have dried out a little too quickly, meaning that there was not enough liquid for the potatoes to cook in and this may have caused them to become hard.
